Trofiette with ‘Primitivo’ Wine in a Traditional Ragù Sauce and Parmigiano Reggiano

A spiral shaped pasta, typical of the Ligurian region, trofiette are shaped by hand.

Flavoured with ‘Primitivo’ wine, this pasta dish is for the lovers of a hearty meal with a strong palate.  We have chosen the ‘Primitivo’ wine, an excellent ruby coloured wine, typical of the Puglia region.  This wine blends well with the Ragù sauce and the aged parmesan.  The traditional Ragù sauce is made from carefully selected beef and pork minced meat, carrots, onion and celery.  All ingredients are slowly cooked in a rich tomato sauce and left to simmer for hours.  A final sprinkle of Parmigiano and Enjoy!
