Amongst the variety of grains used for pasta making, Buckwheat is used to produce a variety of dishes. Buckwheat is in fact a grain but not a cereal, making it ideal for celiacs as it does not contain gluten.
This dish of buckwheat ‘Cappellacci’ contains a delicate porcini mushroom filling, delicious and light. The pasta blends well with creamy melted butter, sage and pancetta. For a final touch, a sprinke of aged Parmigiano Reggiano. Definitely a treat.
