FLOUR

Flour is a product originating from wheat. In fact, wheat grains are pressed and minced, in order to obtain the fine, granular substance that we know as flour.

EGGS

Eggs, thanks to their emulsifying, structural, frothy and colouring characteristics, represent an important ingredient for many products across different diets and requirements. They are full of natural substances, especially protein.

SEMOLINA

Semolina is another product derived from durum wheat, and like flour, it is also produced from the the crushing of the wheat, which result in larger thick grains of semolina with a yellowy, golden colour.

WATER

A simple, daily task such as boiling water can be the subject of highly contested discussions. How much water should be used? Should you cover the cooking pot? When should you add the salt? And once you put in the pasta, should you lower the heat? Let’s try clarify some things around.

SAUCES

With pasta always being at the forefront of Italian gastronomy, the natural succeeding step were its condiments, making pasta an all-rounder. Each pasta recipe can truly embody the tastes and flavours of that particular time of the year.

FRESH

Fresh pasta is truly a work of art, and it requires an in-depth knowledge of primary sources and fine techniques. Starting from the flour, with each type of pasta having its own specific flour. For finer pasta we use normal white flour, while for a more rustic feel we opt for a higher percentage of semolina flour.

FILLING

Filled pasta is a type of fresh pasta that is made from pastry which is then filled with various mixes based on meat, fish, poultry, greens, dairy, sweets or organic products. Tortellini, Agnolotti, Ravioli, Cappelletti…names and forms can vary greatly but the idea remains that of delicious, fresh dishes that can make every occasion special.

Pour the sauce in a large sauce pan.

Add a spoon of boiling pasta water to the sauce and stir without heating.
